Back in the good old days, like most teenagers, I was perpetually hungry. Somehow, in Momâs kitchen pantry there was always a three-pack of canned escargots. I donât know why they were there, as none of my family members were eating them. The price probably appealed to my momâaround $1.29 a can, from what I remember. I was always craving a snack after school, and one day I decided to open a can, sautéed the escargots with a garlicky butter, and toasted myself a piece of bread to go along with it. The snails reminded me of mushrooms in a way, and I had no problem with mushroomsâI always loved them. After three days, all the cans were gone. I had to wait until the next week before another three-pack appeared in the pantry. This went on for years, and my mom never asked who was eating the snails on a regular basis. They just kept coming back. Thatâs why I needed to have a version of escargots à lâail on the St. Lawrence menu.
